South Taft first appeared as an unincorporated place in the 1960 U.S. census; and as a census designated place in the 1980 United States census.

2020

The 2020 United States census reported that South Taft had a population of 2,100. The population density was. The racial makeup of South Taft was 36.4% White, 0.4% African American, 3.1% Native American, 0.4% Asian, 0.1% Pacific Islander, 44.1% from other races, and 15.4% from two or more races. Hispanic or Latino of any race were 66.0% of the population.
The whole population lived in households. There were 612 households, out of which 48.9% included children under the age of 18, 36.8% were married-couple households, 14.9% were cohabiting couple households, 27.8% had a female householder with no partner present, and 20.6% had a male householder with no partner present. 18.1% of households were one person, and 8.3% were one person aged 65 or older. The average household size was 3.43. There were 451 families.
The age distribution was 34.4% under the age of 18, 12.9% aged 18 to 24, 25.4% aged 25 to 44, 19.4% aged 45 to 64, and 7.9% who were 65years of age or older. The median age was 26.5years. For every 100 females, there were 106.7 males.

The racial makeup of South Taft was 1,404 White, 21 African American, 55 Native American, 5 Asian, 11 Pacific Islander, 596 from other races, and 77 from two or more races. Hispanic or Latino of any race were 931 people.
The census reported that 2,028 people lived in households, 141 lived in non-institutionalized group quarters, and no one was institutionalized.
There were 606 households, 293 had children under the age of 18 living in them, 251 were opposite-sex married couples living together, 117 had a female householder with no husband present, 72 had a male householder with no wife present. There were 73 unmarried opposite-sex partnerships, and 4 same-sex married couples or partnerships. 115 households were one person and 33 had someone living alone who was 65 or older. The average household size was 3.35. There were 440 families ; the average family size was 3.75.
The age distribution was 732 people under the age of 18, 275 people aged 18 to 24, 567 people aged 25 to 44, 457 people aged 45 to 64, and 138 people who were 65 or older.
