Alpha-humulene synthase is an enzyme with systematic name -farnesyl-diphosphate diphosphate-lyase . This enzyme catalyses the following chemical reaction:
The enzyme from Zingiber zerumbet, shampoo ginger, also gives traces of β-caryophyllene.
