Comprehensive investigation and comparison of surface microstructure of fractionated potato starches is a scholarly work, published in 2019 in ''Food Hydrocolloids''. The main subjects of the publication include chemistry, dietary fiber, paper studies, colloid, food science, microstructure, and chromatography. AFM images showed that different fractionated granules had different nanoscale 'blocklet' structures on their surfaces, indicating differences in the molecular self-assembly of amylopectin side chains at the surfaces.
